Introduction to macro- and micronutrients, including definitions, classifications, chemical structure, physical and chemical characteristics and physiological function. Digestion, absorption, transport and storage and factors influencing these processes. Interaction with other nutrients and dietary factors. The biochemical role of micronutrients and their importance in relation to both oxidation and antioxidation. Storage, mobilization and metabolism of macronutrients. Regulation of the mobilization of macronutrients in the body at rest and during work/physical activity. Mechanisms to sustain the fluid, energy and macronutrient balance. Examples from relevant and new research will be used including diet in the context of sustainability.
